Ingredients
1 package thin rice noodles (8 oz)
1/2 pound skinless, boneless chicken, cut into bite-size pieces
1/2 pound pork tenderloin, cut into bite-size pieces
1/2 cup soy sauce
1/2 medium head cabbage, shredded
2 shredded carrots
2 chopped green onions, 1 inch pieces
1/2 pound peeled and deveined shrimp
ground black pepper to taste
lemon (to be squeezed into the pancit)
Directions
1. In a large bowl, put the rice noodles and cover with warm water. When soft, drain, and set aside.
2. In a medium heat, brown the chicken and pork until cooked. Season with soy sauce and pepper. Remove and set aside.
3. Saute the cabbage and carrots until tender. Stir in the noodles, green onions and shrimp.
4. Cook for 4 to 5 minutes, stir in the chicken and pork, and cook for 5 more minutes.
5. Salt and pepper to taste.
6. Serve hot with sliced lemon on the side.
