Terrific Recipes For Your Super Bowl Party

Febuary is fast approaching which mean the Super Bowl is right around the corner.  If you are looking for easy, deliscious snacks for your Super Bowl party that are sure to be a hit with your rowdy guests, here are a few of my favorites:

Stuffed jalepeno peppers

1/2 cup of chopped chorizio sausage, skins removed

1/2 a chopped onion

2 tbsps of either mayonaise or sour cream

a dash of your favorite hot sauce

1/2 cup grated smoked gouda cheese

1/4 cup of softened cream cheese

salt & pepper to taste

12-15 jalepenoes

Mix the first 7 ingredients.  Wash the peppesr & slice a small section down one side.  Remove seeds & fill with the mixture.  Replace with piece of pepper that was sliced off.   Optional: wrap with prosciutto or bacon.  Bake at 350 F for 20 minutes.

Alternative to chorizio & gouda: replace with crab meat, add some grated lemon zest.  The crab meat mixture is also excellent for stuffed mushrooms.  Simply remove the stems from large button mushrooms.  Lightly saute the mushrooms in garlic & butter, just to soften.  Fill with the crab mixture & top with grated mozarella cheese.  Bake in the over for 15-20 minutes until cheese is melted & bubbly.

 

Artichoke dip

A tasty treat that can be served with mini pitas, crackers, toast rounds or a vegetable tray.

A can of artichokes, drained & finely chopped

1/2 cup of cream cheese, softened

1/8 cup of grated parmesan cheese

2-3 tbsp of finely chopped hot banana peppers ( or a few dashed of hot sauce )

1 tbsp of grated lemon zest or a tsp of lemon juice

1/4 c chopped green onions ( white onions also can be used )

salt & pepper to taste

3-4 tbsps of mayo

Mix together.  Can be served cold but I prefer to warm in the microwave or oven until just heated through.

 

Nacho dip

Combine a pkg of cream cheese, softened, with 1/2 cup of sour cream.  Place the mixture in a servicing bowl.  now layer it with your favorite nacho toppings such as salsa, hot peppers, chili, guacamole, spiced hamburger, olives, onions.  Top with a thin layer of taco sauce & cheddar cheese.  Heat through either in the microwave or oven.  Serve with nacho chips.

All of these recipes can be made ahead & simply warmed up so that you do not miss any of the spectacular plays during the exciting game ahead.  I hope you & your guests enjoy!
