Spinach-Berry Salad

scrollWe went to friends for Thanksgiving Dinner....most of the food was prepared by our hostess and what a spread it was!  I prepared this simple and colorful salad to share with everyone.  It was a hit and was oh, so easy!  I wish I had taken a picture of it...red and green make beautiful holiday colors!

Spinach-Berry Salad 

  • 1 lb fresh spinach (I buy the kind in the bag, pre-washed)
  • 2 pints strawberries (sliced)
  • 3 kiwi fruit (peeled/sliced)
  • Chopped macadama nuts (handful or so)

    Dressing:

  • 1/3 cup vegetable oil
  • 3Tablespoons raspberry vinegar
  • 3 Tablespoons raspberry preserves

Mix, dressing and refrigerate.  Toss together with salad and serve.

Mary, I've made a version of that salad before (without the kiwi) and it is wonderful.  I love that it isn't over-filling.   In the summer we'll add some grilled chicken to it and it's a whole meal.

Mary!  I make this same salad every year for dinner on Christmas Eve... only with raspberries!  I LOVE it!  You are right about the colors... how perfect can you get?

sounds like a great recipe... I will have to try it. I'm sure it is very pretty.  We made a salad with spinach, tart apples, celery, ground walnuts and lite blue cheese dressing so often we got tired of it.. but we need to do some different spinach salads.  Actually we did one similar to this but it did not have kiwi, it had  pine nuts in place of macadam nuts and I think we made a dressing...
