Here is another one of my favorites. It is not my grandmother's chicken soup but rather a Greek variation that I find really good!
Called Avgolemono in Greek you need the following:
6 cups of chicken broth
1/3 cup orzo pasta
3 large eggs, separated
salt and pepper to taste
3 large lemons
Bring chicken broth to a boil and add the orzo; simmer about 15 minutes and then remove from heat.
Beat the separated egg whites with salt until stiff and then slowly add the yolks slowly, still beating. slowly add the juice from the freshly squeezed lemons. next add about a cup of the hot broth - slowly - still beating the mixture.
Now you can add the remaining broth mixture and continue beating to thicken. Do not boil this as it will curdle!
Serve hot at the start of a meal or enjoy alone during the cold winter months!!!!
