Calling all cookie lovers! Recipes wanted, please.

I am blessed with a daughter-in-law who is wonderful and a friend as well.  Every year we have what we call our "annual cookie-thon" for the holidays. 

Michelle, her friend Cheryl and I take a Sunday and make cookies, fudge and more.  Usually we make 4 or 5 different things each and then we split them up for our families.  We have a fun time and my grandson and Cheryl's son have fun decorating sugar cookies.

I would love to have your suggestions for some really great cookies or bars...well, anything that is really wonderful for the holidays.  Sugar free recipes would be great too IF you've tried them and know they are good. I don't have time for practicing and tweeking...

In the past I have made pizzelles, pecan cups, cherry cheese cakes (minis), nut balls...and much more of course.

Also, does anyone have a recipe for a great nut roll? My Aunt used to make it and it was so wonderful....it had the best nut mixture filling made with ground walnuts.

Being the busy person that I am I can highly suggest the double chocolate chocolate that is in your grocerys dairy case.  No mess on fuss but very tasty right out of the oven.

I found an amazing recipe in Cooking Light for Chocolate Malted Cookies. Iusually end up doubling the recipe because they go so fast and I like to share. You could probably find it online as well.

Chocolate Malted Cookies

1cup packed brown sugar  

6 Tablespoons Malted milk powder (such as Carnation)

5 Tablespoons butter softened

3 Tablespoons chocolate syrup

1 Tablespoon vanilla extract

1 Large egg

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup milk chocolate chips

1/3 cup semisweet chocolate minichips

Preheat oven to 350. Combine first 6 ingredients in large bowl, beat with mixer at medium speed for 2 minutes or until light and fluffy. Lightly spoon flour into dry measurubg cups, level with knife.  Combine flour, baking soda, and salt . Gradually add flour mixture to sugar mixture til blended. Stir in chips. Spoon onto baking sheet. Bake 10 minutes. Cool on pans 2 minutes then cool on wire racks. They come out chewy and soft and soooo yummy!

If you like peanut butter cookies, this is a great recipe. I don't remember where I got it but a friend and I made them last Christmas and they were a hit!

Peanut Butter Chocolate Pinwheels

INGREDIENTS:

  • 1/2 cup peanut butter
  • 1/4 cup plus 2 tablespoons shortening
  • 2 tablespoons butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chips, melted

PREPARATION:

In a mixing bowl with hand-held electric mixer, cream peanut butter, butter, shortening, and sugar until light and fluffy. Beat in egg, milk, and vanilla. In another bowl, combine flour, salt, and soda.

Stir flour mixture into the first mixture, blending well. Chill dough for 1 1/2 hours, or until firm enough to handle. divide dough in half. Roll each half of cookie dough out on a floured piece of wax paper to a 10x8-inch rectangle. Spread with half of the melted chocolate. Starting at long edge, roll up like a jelly roll. Wrap in waxed paper and repeat with remaining dough and chocolate. Chill for 30 minutes, then slice 1/4 inch thick. If chilled longer, the chocolate will harden and they might be difficult to slice.

Bake cookies at 375° for 8 minutes, or until lightly browned. Makes about 4 dozen cookies.

The other night on Food Network I watched Alton Brown make Chocolate Peppermint Pinwheel cookies.  It looked very easy and sounds delicious. 

Basically he made sugar cookie dough, split the batch in halves, added melted chocolate and vanilla extract to one half, and added egg, peppermint extract and crushed candy canes to the other half.  Rolled each out into a great big rectangle with the chocolate dough just slightly larger than the peppermint.  Placed the peppermint on top of the chocolate, then rolled the whole thing together into a big log.  Froze for 2 hours (so the dough would hold its shape during slicing) then used an electric knife (not specified in the linked recipe, but that's what he used on the show) to slice the dough log into beautiful spirals.

I can't wait to try this one out!
