While on a Caribbean Vacation in Anguilla …Relaxing, reading and enjoying Life ! I was staying at 7 Palms Villa over Valentines Day ! Watching the wales in the distance passing by truly a sight to be seen …..!!!
Passing the time in the afternoon , I decided to acquire a Lobster or two…. You can go down to Island Harbor in Anguilla and ask around you will find a Lobsterman that will gladly trade you a few just caught Lobsters for a few dollars !!

I started to think of a Valentines Breakfast …..What to have for breakfast ….. I need a Breakfast Recipe …. A Lobster Recipe…….a sauce for Lobsters … all of those ideas started to roll around in my head ……..Ok……. How about Lobster Benedict Ah, Jackpot sounds like a winner !!!
