"CLASSIC CAESAR SALAD"
(Serves 2)

 

10 oz. Romaine lettuce, chopped in 1 inch squares
1 oz. Anchovies (approximately 2)
1 tbls. Fresh Garlic, pressed
1 tbls. Dijon Mustard
½ tbls. Worcestershire sauce
1 Egg Yolk, coddled
½ cup Good Quality virgin olive Oil
1 tsp. Lemon juice
2 tbls. Red wine vinegar
¼ cup Parmesan cheese, freshly grated
1 cup Seasoned croutons, home-made preferred
Freshly ground black pepper


Place anchovies and fresh garlic in wooden salad bowl. Crush into fine paste with two dinner forks. Add Dijon mustard and Worcestershire sauce to paste and stir. Add egg yolk and continue to stir. SLOWLY add olive oil while continuously stirring. Add lemon juice, red wine vinegar and half the Parmesan cheese. Stir. Place Romaine lettuce in dressing mixture and toss, making sure to wet all sides of the lettuce leaves. Add croutons and remaining Parmesan cheese. Toss lightly. Serve on cold plates with chilled forks. Sprinkle with ground pepper to taste.

Elaine, I love LG's in Palm Springs!! and yes I have that recipe card for the caeser salad and have made it on several occations!! First time we dined there was a couple of days after my husband returned from his first tour to Iraq! He fell in love with the place! We miss it!! Thanks for a great memory!

Hi Elaine,

Las Casuelas, yep been there several times and always loved it. LG's is one of my very favorites too. The server comes out with hot sizzing plates lined all the up and down his arm, crumbled blue cheese melting on the steak, yum.  The downtown PS location is my favorite. Last time (earlier this year) the service in Rancho Mirage was disappointing, I will not be back to that one.  Shermans' Deli is new to me, I'll try it next time.

BTW, one of my favorites (maybe Palm Desert or Rancho Mirage) is Amechi's  (sp?) a little Italian place, north side of the street on 111, it's always been great.

Jo, it is a great salad, this post made me so hungry I am making the LG's Caesar right now, I had to have my husband stop and get the fresh Parmesan, that really makes it yummy!!
