The Birth of a Jamaican Rum Wedding Cake
We celebrated our younger daughter’s wedding this past weekend. It was a wonderful celebration of family and close friends from around the country.
One highlight was the Jamaican wedding cake, with a taste of Appleton rum as would be appropriate.
The creation of this masterpiece took several weeks, beginning with soaking the fruit (raisins, currents and plums) in red wine and rum and then pureed. That took a couple of weeks (in San Francisco, by the way). The majority of the makings of the cake came from Jamaica by way of SFO to San Diego.
The creation, from raw ingredients to final work of art, took 2 days.
I might add it was extraordinary, created with love by the groom’s Mother.
There is still some fruit puree – we’ll just have to make do with some special muffins or bread.
