This sounds awesome and my daughter makes something pretty similar but not with the shredded cheese. I think the homemade dressing makes a HUGE difference. BACK WHEN I had time to eat healthier I would make my own dressing using flaxseed oil. Everyone would love it as well.

Dried cherries sound good - I now have tried  fresh seedless grapes.   The dressing is just the best!

I make wilted lettuce all the time without even trying -it just gets that way in the fridge.  You do that on purpose? LOL

Yeah Kathleen, you mix vinegar and sugar to taste, heat it up and pour it over leaf lettuce.  My grandmother made it with a diced hard boiled egg in it.  I think your recipe would work well.  Awwwww, I love your horsies!

Go Maureen - my  married daughter just made the dressing and put it in her Tupperware shaker for mixing flour and water for gravy. She can shake it up and the container seals and has a big pour spout. She just gave me that idea, smart girl.
