But hey, what else are you going to do with that endless supply of zucchini fruit (yes, its technically a fruit, but won't be too good with cool whip) as you celebrate this holiday - not just in Murphy, NC, but nationally, on August 8th.

Experienced gardener's know that Zucchini is one of the most prolific plants in all of the gardening world. A single plant produces a seemingly endless supply of Zucchini and a small row of zucchini has the potential to end world hunger.

By the time August arrives, local gardeners everywhere are reaping far more zucchini than they can Zucchini the Garden Giant in Murphy, NCpossibly use. We use it in an untold number of recipes, from soups and stews, to breads, dips and casseroles.  Don’t tell anyone, but Carol actually has a handy-dandy machine that turns it into spaghetti-like strands!

Still, the fruit matures on the vine faster than anyone can even pick it. Gardeners, almost desperate, as they try to give zucchini away to family, friends, coworkers and everyone they encounter. By August, even non-gardeners have had enough and it seems like everyone avoids you with your arms full of giveaway zucchini.

Desperate times calls for desperate measure.  It's time to sneak over, under the cover of darkness, to your neighbor's porch, and unload some zucchini! This may solve your problem for today.  But, what will you do with the harvest tomorrow!?!  Do you have any favorite Zucchini recipes to share?

1/3 cup Bisquick

1/4 cup parmesan cheese

salt and pepper to taste

2 eggs slightly beaten

2 cups grated zucchini

2 tbl margarine

combine dry ingredients, stir in eggs

fold in zucchini

for each round drop two tablespoons into a hot frying pan with melted butter and book 2 to 3 minutes on each side.

That was the original recipe and I'm a fan of "my own twist" on everything I look, so I also grate 1/2 onion and add some fresh dill weed to mine.    We love them.

 

We also cut them in half, brush lightly with grape seed oil, salt and pepper and grill, keeping them longer on the peel on side, which if it chars we sometimes peel off on our plate- depends on size and how long it takes them to get tender on the grill.  works best with really small ones.

 

I didn't grow any this year, but my gardener pro neighbor did and I bought a few from him.

Lee and Carol, I think it may be harder to find homes for zucchini than for new kittens.
