Neon Eggplants - Very Eye-catching and Very Delicious I’m Told


Our trip to the Farmer’s Market this morning yielded lots of good veggies (and photos) including neon eggplants (People think it’s odd that I take pictures of the vegetables and tend to give me strange looks.)


Neon Eggplant


Eggplant is a member of the nightshade family, like potatoes, tomatoes and peppers.
Tobacco and poisonous nightshade and the angel trumpet plant also are in the nightshade family. Eggplants have been around at least 1,500 years and originated in Southeast Asia.

Neon eggplants are an attention
grabber for sure, with their bright green calyx and purple-pink fruit.. I have never tried these before but was told by a lady standing next to me that they are wonderful and not bitter at all. She was buying several. We’ll see. I came home and looked up recipes for neon eggplant and these would work for any eggplant.

Colicchio and Sons Restaurant in NYC has grilled Neon Eggplant on the menu.

They are very delicious, Toni!  I was at our local Farmer's Market this morning, and enjoyed their appearance among the flowers, and other fruits and vegetables.  Occasionally, I make Moussaka (a Greek dish).  I prefer using the neons because of their more slender shape, as well as their color.

I should also add that I was taking a lot of pictures at the market this morning, and I got strange looks too!  After awhile you become immune to it:-)

Hi Toni.  I don't think I've ever see neon eggplant, but that's a good name for them.  When I first saw the photo I wondered, Did Ipiccy get out of hand?  It's a vegetable that would look right at home among the flowers!

Toni: I do not believe I have ever seen a neon eggplant before.  Very pretty looking and I bet they are delicious.

Hi Toni, Sort of laughing at the strange looks. I relate totally. As for these neon eggplants, while I am not a big fan of eggplant, I would buy them just for the color. I would probably set up a still life or something silly and people would think we altered the color. We would knoow otherwise, LOL.

Dianne - this picture is totally unretouched except for the frame and my name.

Anita - I've heard from several people that they are delicious. I need to try them.

Than - I believe you're right on that. I read a mystery a few weeks back where the murder weapon was nicotine juice :)

William - I'm sure you get those looks too. Those of us who are photograph-obsessed must all get them. That's a great idea about the still-life. I'll have to pick up a decent amount.

Sheila - I posted a couple of links to recipes for them. Just grilling them is good. I made a pizza the other night and grilled a regular eggplant (slices) and put it on. It was great.
