November 30th, Thanksgiving was just the other day So what is for Dinner tonite?

 

For all those who forget like me, Thanksgiving was on the 22nd of November. After Thanksgiving we had, Turkey Sandwiches with Lettuce, tomatoes and avocados for dinner, than we had Turkey Soup made with Turkey stock (bones and leftover Turkey meat and all), than we had Turkey Spring Rolls and then we had Turkey Ragu with Rigatoni Pasta.

So here we are at the Finnish line, what do we do with some of the leftover Turkey Ragu? Then the next question is, what do we do with the Decorative Pumpkins? Well how about a Pumpkin, Turkey, Ragu Bean soup?

Easy Dinner: leftover Turkey Stock, two Pumpkins, can of Navy Beans and a few ladles of Turkey Ragu from the other day and all the ingredients are all there!

Ok for those who you would like a bit of help: 1. Sauté’ some garlic & onions, 2. Add some carrots, celery root or celery stalks 3. Parsley root or some Parsnips whichever is available, 4. One or two potatoes cut into small pieces, 5. Parsley & bay leaf and one can of navy beans and one can of garbanzo beans. 5. Add the leftover Turkey Ragu and or add some frozen mixed vegetables: if you do not have it, substitute a can of tomatoes and sausages and it will be just as good!

Take the Pumpkin, clean out the inside save the hatJ for decoration, use some olive oil, bake it in the oven for about 25 minutes at 350 degrees, then switch over and add a bit of salt on the inside and bake for another 20 minutes.

In the mean time, make the soup add some parsley flakes. Once done than take the pumpkins add the soup inside the pumpkin, put it back in the oven for another 15-20 minutes, bake at 350 degrees once done sprinkle fresh parsley and shredded parmesan cheese on top and serve!

DeeDee we had a lot of left overs, since I was not able to get a small Turkey and a couple people had to cancel due to family issues!

Michael I have not done Wine Pairings... maybe I should to answer your question a nice inexpensive Spanish Garnacha works well with a soup like this....now if you are a white wine person like Diane than a  reasonably priced Viognier  or Chardonnay would work as well!
