A few weeks ago I decided to enjoy the last warm, summer like days by eating outside at one of my favorite neighborhood restaurants:
Carlos Miguels Mexican Grill at Country Corners in the South West of Colorado Springs.
There is a wonderful patio with sun umbrellas. Though the patio faces a pretty busy street, the noise never really bothered me much. I just enjoy being able to sit outside.
The food is absolutely delicious and tastes fresh. The menu boasts a lot of traditional Mexican [restaurant] dishes like, quesadillas, enchilladas, and much more at great prices. I have enjoyed their Tortilla soup, grilled vegetable salad (see photo below) as well as their carnitos. I have to admit that I finished the plate! All. Of. It. Another favorite of mine is their Salsa. I treat myself by buying a pint of their homemade salsa (it has a smoky flavor with kick) when I have lunch there. The staff is very kind and attentive, the restaurant is clean, never messy.
It was news to me that Carlos Miguel’s has actually 6 locations (two in Colorado Springs, Frisco, Castle Rock, Littleton, Monument). That’s great I’ll definitely keep an eye out for it.
