If you have never tried Dutch babies or oven apple puff pancakes you should. They are really easy. And we did a bit of a twist by adding some rum to the apple mixture. This makes two very large pancakes that serves 3-4 people
Preheat oven to 425 degrees
2-3 apples thinly sliced
Cinammon
3 tbs brown sugar
2 tbs rum
1 cup milk
1 cup flour
1/2 cup sugar
6 eggs
2 tsp vanilla
Butter
Saute 2-3 apples over medium heat in butter till soft. Add cinnamon to taste. Add brown sugar and rum.
Meanwhile mix eggs, flour, milk, sugar and vanilla. Mix very well till light and airy.
Put a large pat of butter in 2 round cake pans. Put in oven to melt. Watch carefully as oven is very hot. Once melted, divide apple mixture between pans then divide pancake batter between pans as well. Put in hot oven immediately. Bake for 20-25 minutes till golden brown and puffy. DO NOT OPEN OVEN DOOR TO CHECK AS THEY WILL FALL.
When done put butter in the middle sprinkle with powered sugar and syrup. Whipped cream is also a nice touch. Enjoy!
