When Life Gives you Lemons….Make Lemon Bars and drink wineI met with one of my dearest friends for her birthday Friday. As we were saying good-bye, she handed me a huge bag of lemons from her two lemon trees. So I brought them home and put them in a big bowl with some tangerines. I think fruit sitting in a pretty bowl in the kitchen looks so beautiful and smells so clean and fruity. I love the citrus aroma.

But what to do with 30+ lemons as I cannot drink that much water and lemon slices so I need to cook something with the lemons. I could make lemonade but no I am not a real fan of lemonade so instead I am going to make “Lemon Bars”. And while I am cooking, have a nice glass of wine with a lemon slice in it. I feel just like Julia Childs.

 

Life handed him a lemon as Life sometimes will do.
His friends looked on in pity assuming he was through.
They came upon him later reclining in the shade.
In calm contentment drinking a glass of lemonade.

So when life hands you a bad hand just turn yourself around and make something better of it and enjoy a ‘Lemon Bar’ too. So here is a delicious recipe to try.

Mix:

1 cup Flour

¼ cup Powdered Sugar

½ cup margarine or butter

 

Stir together and press into the bottom of a 8X8 square glass pan. Bake at 350°for 20 minutes.

2 Eggs- Beaten by hand

½ tsp of Powdered Sugar

3 Tablespoons Lemon Juice (1 lemon)

1 cup Sugar

2 Tablespoons Water

Combine and pour over hot crust and bake for 20 minutes at 350° for 20 minutes. Cool and sprinkle with Powdered Sugar (use a small strainer). Cut with a wet knife and enjoy………

Hi Wika,

I love all most fruit trees but not a fan of pears and figs. My neighbor has apples and oranges and I have plums and apricots.

I have made orange bars too but added a little more juice since orange is not quite as pungent as lemons.

Hi Kerrie,

 My mother taught me to cook from scratch; make biscuits, cornbread, gravy, follow recipes and to make up my own and I hated every second but she said I needed to know how to cook.

I really do not like to cook but I do it to make special things like goodies for holidays. Yesterday I was at the grocery store (also not a favorite place to shop) and I bought chicken legs and small red potatoes so I went home and cooked dinner. I have not cooked in months but is was fun. I prefer to make cookies, pies, cakes and breads and give them away.

Kristin, yummy.  You & I would be a good pair.  You like to make cookies, cakes, breads and pies.  I prefer pot roast,  baked salmon, stir fry, pasta of any variety.  Yum-yum!

I will pass the lemon bar recipe to my daughter who does like to bake.  She is coming with grandsons for dinner on Sunday.

BTW  I love your snowman in the background.  Erie has lots of snow for making snowman.
