Thursday, February 7
French Steakhouse - $40

Transport your tastebuds to France! In this workshop, hanger steak, a very beefy, very juicy, tender cut of meat is served with skillet potatoes and asparagus with hollandaise for the ultimate European-style steakhouse experience. And for dessert - a gorgeous chocolate soufflé served hot out of the oven with creamy custard sauce. Très bon!

Perfectly prepared soups start with some basic classical French techniques – and a little bit of love. Learn chefs’ secrets for taking shortcuts without sacrificing quality. Then learn to garnish soups like a pro, elevating your soups to a whole new level.

Wednesday, Febraury 27
Basic Knife Skills - $40

Minimize waste, save time, prevent accidents and feel confident using your knives once you’ve honed your skills. Master proper chef knife techniques for chopping, mincing, slicing, dicing, julienning and cutting into chiffonade. Chef will instruct you on the selection, care and proper use of cutlery, along with the art of maintaining a sharp knife. At the end of class, chef will prepare a delicious dish utilizing the product of your knife work.

Thursday, February 28
Homemade Sauces - $40

A well-made sauce should enhance - never mask- the flavors of a dish. Chef will prepare five sauces, both classical and contemporary - and demonstrate how to vary these sauces to suit your own tastes. Once you have mastered the basic techniques for these sauces, you'll be able to prepare any number of variations to complement meat, fish and poultry dishes. Learn how Hollandaise quickly and easily becomes Sauce Béarnaise. Or, transform Alfredo sauce into the perfect cream sauce. You can even make homemade ice cream from crème anglaise - the possibilities are endless.

-Cocktail Sauce and Chive-Beurre Blanc
-Seared Breast of Chicken with Shallot-Mushroom Pan Sauce

Vegetarian Dinner Party - $40

Vegetables are naturally high in fiber, vitamins and minerals and low in fat and calories. In this ambitious, technique-driven workshop, vegetables take center stage. This mostly make-ahead, meat-free meal is elegant and impressive enough to serve at any dinner party. At the end of class, we’ll feast upon our fabulous, fresh vegetable-lover’s feast.

-Eggplant Roulades with Oven-Dried Tomatoes and Chèvre Cream Sauce
-Smoked Wild Mushroom "Baklava"
-Baby Greens with Truffle Vinaigrette

   I am hoping to go this year, I have heard that the classes are fantastic! The Copper Door in Hayesville, NC is one of my all time favorite restaurants - absolutely fabulous food and atmosphere!
