Refrigerate or Not ?

This afternoon I was making myself a salad and as I reached over to get the tomatoes from the counter I found myself feeling really happy.  Happy because I had saved these firm, pretty, red jewels from a mushy fate in the refrigerator.  My 6-year old daughter in her thoughtful way was helping put away the groceries and where did she put them...yup...you guessed it...But why do so many people insist on putting them in there in the first place ?  

Don’t the farmers invest countless dollars to protect crops from frost and cold temperatures ? When you go to the store, they are not in a refrigerator, they are out in the open.. But when we get home our first instinct is to stick everything not in a can or box, in the fridge...
I love vine ripened tomatoes.  When I was growing up my mother grew what I would call a “salad garden” every year.  Nothing but cucumbers and tomatoes.  She loves salads.  She would always go out and pick the biggest tomatoes off the vine and put them in the window to soak up just a little more of that summer sun until they were perfectly ripe all around.  The only problem is they would never make it to the salad she had planned for them. My sister and I would take them off the window sill rinse them off and eat them like apples, with just a little bit of salt and pepper.  Still others insist on putting them in the fridge, but for me I still remember them warm out of the summer sun, any other way just doesn’t seem right. The great thing about living in Fayetteville, NC is that there are lots of farmers markets where you can get that fresh from off the vine taste.  Some Farmer’s Markets are closed for the season, but there are still a few that stay open year round.  Even better, plant your own garden ! Don’t have a backyard ??? Salads are always good, and they help you with your weight as well.  Tomatoes are good just by themselves too.
