This is a WONDERFUL cake!
Box Yellow Cake Mix
Bake Cake mix (*) according to directions on box--pour into 3 layers
* I add 1 extra egg yoke and 1 tsp. vanilla to cake mix.
Pineapple Glaze:
1 large can crushed pineapple
2 cups sugar
3 TBSP corn starch
Combine ingredients and cook until clear and thick. Add:
1 TBSP Vanilla
1 Stick butter
1/2 cup Chopped pecans
1/2 Cup Coconut
Cool slightly, then spread between layers and on top of cake.
I cook my glaze, cool it a little (still in the pan), then put it in the refrigerator overnight. Then, the next day, let it warm up on the counter for a while and then put it on the layers. It is not so "runny" and does not ooze out all over the cake platter.
Store it in the refrigerator.
OK...I know...this is a little fattening...but...so good. Make it for Valentine's Day and ENJOY!!
