Capellini with Lemon Shrimp & Avocado
Serves 4
ingredients:
16 oz. raw jumbo shrimp shelled with tails removed
12 oz. dry capellini
1 tablespoon olive oil
1 tablespoon of butter
3 garlic cloves
pinch of red pepper flakes
1 lemon juiced
1 green onion
1 ripe avocado
cilantro or parsley
salt & pepper
Directions:
1.Cook the pasta according to package instructions for 8-10 minutes. Drain and set aside.
2. Melt butter and olive oil. Sautee onions, red pepper flakes, for 1 minute, season with salt & pepper, add in the shrimp and garlic and cook quickly for 3-4 minutes until they are pink and just cooked through.
3. Stir in the lemon juice and cilantro or parsley. Add in the cooked pasta and combine with shrimp.
4. Chop avocado and season with salt & pepper.
4. Serve in pasta bowls, garnishing with more cilantro/parsley and chopped avocado.
