It's been eleven weeks since I started my vegan adventure!
I can't believe how easy it's been giving up meat and how much I'm enjoying the food!
I doubt I could have pulled this off without internet access to so many great vegan recipe sites. Finding recipes takes time, something that most people don't have. Shopping and cooking for a new diet is more time consuming at first too....it's much faster to throw together meals you are used to making. Some people use a lack of time as their excuse for not eating better. Don't let this stop you....it's just a matter of creating new habits.
Here are a few of my recent favorite vegan recipes.

I cut the sweeteners in half. I used only 1/4 C brown sugar and 1/4 C maple syrup. We thought they were very good, and plenty sweet enough.

You won't even miss the cheese!
Dough (I've included my favorite dough recipe below)
1 14 ou can Petite Diced Tomatoes
Dried Oregano to taste
Fresh Baby Spinach (approx. 1/3 small bag)
6 Mushrooms - sliced
1 C sliced Greek Kalamata Olives
6 Artichoke Hearts sliced (I used canned)
Fresh Basil
Lightly grease a 14" pizza pan with olive oil. Roll dough out and place on pan. Rub top of crust with olive oil.
Drain tomatoes and spread evenly over crust. It doesn't seem like much, but there is plenty. Sprinkle with oregano.
Rip spinach into small pieces and spread on top. Spread mushrooms, olives, and artichoke hearts evenly over pizza.
Bake in preheated 450 oven for approx. 15 minutes. Add fresh basil before serving.
PIZZA DOUGH (Adapted from KitchenAid Mixer recipe book)
1 pkg. active dry yeast
1 Cup warm water 105-115 degrees (microwave 1 cup room temp. water for 40 sec.)
1/2 tsp salt
2 tsp olive oil
3 Cups Flour (I use 1 1/2 C Organic All Purpose and 1 1/2 C Organic Whole Wheat)
Dissolve yeast in water in warmed mixer bowl.
Add salt and olive oil. Add All Purpose Flour and 1 Cup of the Whole Wheat flour. Use Spiral Dough Hook and mix on speed 2 for 1 minute. Add remaining 1/2 Cup Whole Wheat flour and continue mixing for another 1 1/2 mins or until dough starts cleaning sides of bowl. Mix on Speed 2 for another 2 mins.
Place dough in greased bowl and cover. (I lay a sheet of wax paper over top of bowl and then top with a kitchen towel.) Keep bowl in warm place, away from draft, for 1 hour.
I cut dough in half for a very thin, crispy crust. Use all the dough if you prefer thick crust.
