Is there anything more soothing for the soul than soup? One of my favorite go-to soups is Chicken Tortilla. Super easy and super quick this soul satisfying supper is simply sensational.
See how fast you can you can put it together.
- Roast chicken (skin removed, deboned, and chopped)
- 64 oz chicken broth
- Fresh corn off the cob (3 ears)
- Cooked rice (optional)
- 1 container of fresh salsa, I use Santa Barbara brand Mango and Peach Salsa (in the refrigerator aisle)
- Toppings: chips, cheese, avocado
Assemble above in your Le Creuset pot and simmer. Top with blue corn tortilla chips and shredded mozzarella cheese (ah, forgot my avocado). Voila. Sunday (or any day) Supper.
