Sunday Soup Supper

Is there anything more soothing for the soul than soup? One of my favorite go-to soups is Chicken Tortilla. Super easy and super quick this soul satisfying supper is simply sensational.

 

See how fast you can you can put it together.

  1. Roast chicken (skin removed, deboned, and chopped)
  2. 64 oz chicken broth
  3. Fresh corn off the cob (3 ears)
  4. Cooked rice (optional)
  5. 1 container of fresh salsa, I use Santa Barbara brand Mango and Peach Salsa (in the refrigerator aisle)
  6. Toppings: chips, cheese, avocado

 

Assemble above in your Le Creuset pot and simmer. Top with blue corn tortilla chips and shredded mozzarella cheese (ah, forgot my avocado). Voila. Sunday (or any day) Supper.

That sounds absolutely Yummy and easy to make ... I don't know if I can find that kind of salsa here in Philadelphia  but I would imagine I could substitute ..This would be a great recipe for the AR cookbook group

Kim- that sounds so good!!!   And, it's one of my favorite soups.  I may make that this week.  Love the color of your Le Creuset. Soup is one of my favorite things to eat, especially when I'm tired.
