It's been sixteen weeks since I started my vegan adventure!

It still doesn't feel like a diet.  

 I've only begun to scratch the surface of all the "vegan" blogs and websites out there.  I find new ones every day.  I can't keep up with all the recipes I'm collecting....so many recipes, so little time!

 Here are just a few of my most recent favorites.

Thai Coconut & Peanut Butter Curry

So delicious!  Has nothing to do with the spice curry, which I don't like.  "Curry" refers to a sauce based, spicy dish.

The ingredient, red curry paste, determines how spicy this dish will be.  I don't do spicy....I used 2 Tbsp. and it was perfect for me....use 3 Tbsp. if you prefer more kick.

It's really good with noodles!

 Mock Tuna Salad Made With Chickpeas

I've always enjoyed a good tuna sandwich.  I think I like this faux tuna even better!

It's so weird how close this is to the real thing.  I didn't add the kelp powder or the nutritional yeast and it's awesome without either of those ingredients.  Feel free to skip them.

 Even if you have never had tuna or don't like tuna....you should give this a try.  It makes a very tasty sandwich!

 

 

 

 

 

Simple, Fast, and GUILT FREE Ice Cream

Slice very ripe bananas into 1-2" pieces.  Freeze.  Blend in food processor or blender (you need a blender that is powerful enough to process ice) until it turns into ice cream!  

 Depending on the bananas, sometimes I add a tiny bit of milk.  ( I use unsweetened vanilla almond milk)

You can add other frozen fruit to the banana....blueberries, strawberries, pineapple or peaches.  

Add a tablespoon of peanut butter or coco powder....so many possibilities!

I'm by no means vegan, and I have tried and loved all of these.  The cilantro pesto and banana ice cream are staples in our house.

Debbie:  It's like soft serve.  You can put in freezer for 30 mins. for a more traditional ice cream.

Rebecca:  Most people who go vegan claim weight loss.  I was eating fairly healthy prior to giving up meat and eggs (I was already dairy free) so it wasn't a huge change in diet.  Also, I have always been really thin and it doesn't take much for me to lose....one or two days of being sick will do it.  I hurt my back and was in bed for two days, eating very little and then a couple weeks later I got a respiratory infection.  I have lost weight, but I think not eating has more to do with it than what I was eating.

Sharon-The one that sounds appealing to me is the ice cream. Maybe the others would be good too but they don't sound good to me but there is a saying "Don't knock it til you try it so I won't. I give you a lot of credit for sticking with this. I should do this with my new healthier eating is find new recipes to try.

Sharon:  The other recipes wouldn't have interested me either,  I usually judge a recipe by it's ingredients and am not very daring when it comes to trying something new.  I'm so glad I tried them, and I'm so glad I'm trying new things....I'm so enjoying the food.

Debra:  My grandsons love it!  It feels good knowing they are just eating fruit and ice when I give it to them!
