Several years ago, while living in Colorado, we spent a few days staying with our good friends John and Tina Hough at their Roosevelt Inn Bed and Breakfast in Coeur d'Alene. One morning, we were served their signature Apple Cider Pancakes, and we were hooked! Those wonderful pancakes and warm syrup made from apple cider have become the feature of our annual Christmas Morning breakfast. DELICIOUS!
Yesterday, my daughter-in-law called from Colorado to get the Apple Cider Pancake and Syrup recipes so she could serve them to the part of my family who would be gathered there on Christmas morning. Although part of us were here in Idaho, and part were there, all of the Scharfs were enjoying wonderful Apple Cider Pancakes with our Christmas breakfasts!
APPLE CIDER PANCAKES
- 2 cups Bisquick
- 1 1/2 cups milk
- 4 egg yolks
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 3/4 cup grated apple
- 1 tsp baking powder
- 4 egg whites whipped
Beat all ingredients except apples and egg whites. Add grated apples and stir. Fold in whipped egg whites. Cook on hot oiled skillet.
APPLE CIDER SYRUP
- 1 cup sugar
- 1/4 cup margarine
- 3 T. cornstarch
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 cups apple cidar
- 2 T. lemon juice
In sauce pan mix sugar, cornstarch, cinnamon and nutmeg. Stir in apple cider and lemon juice. Cook stirring constantly until mixture thickens and boils for one minute. Remove from heat, stir in margarine. Serve over Apple Cider Pancakes and top with a dollop of sour cream.
