Speechless Sunday:  In praise of the Beet Salad

 

 

 

La Brasserie La Quinta

 

We had dinner the other night at one of our favorite La Quinta restaurants, La Brasserie Bistro & Bar at the corner of Washington and Hwy 111.  Beets are one of my favorite winter vegetables, and I'm so glad they are becoming a popular ingredient.  This roasted beet salad with a crunchy goat cheese croquette is perfection!

I love beets too.  Was made when my go to restaurant for salad bar, Ruby Tuesdays, removed them from the bar.

I don't think I've ever had a beet cooked well - maybe I'd like them at a quality restaurant.  But I'd definitely eat up those cheese croquettes!

Kathy-That is quite a colorful salad. I never had beets in a salad. I like them but haven't had them in quite a while

Kathy I have never eaten beets. I do want to try them but do not know how to prepare them or know anyone who does. I don't think opening up a can of beets and heating them up is very appetizing.

That looks soooo good.  I tried goat cheese once and it was a little to salty for me.  But that looks good maybe I'll try it again.
