This Won't Make the Top Ten in Healthy Eating, but $#!^, It's Good!

This is one of those dirty little secrets you keep in the family nowadays.  It used to be fine to eat like this on a regular basis, but now that everyone and his brother and sister are on low fat, high protein diets, we can’t even discuss this recipe in common company.  Yet, everyone who has tasted it, craves it.

 

It is poultry, that is good.  But, after that, it is all downhill.

 

Nora’s Baked Chicken  (serves two to four, depending on your appetite)

 

1 3 lb.  frying chicken , cut into 8 or 9 pieces….leave the tail behind if it is still attached.

 

1 cup of flour, preferably white, unbleached

 

½ to 1 teaspoon black pepper (we use 1 t. of whole ground black or other pepper to suit our taste)

 

2 cups whipping cream (yes, now we are talking serious fat, it gets even better!)

 

¼ cup butter

 

¼ cup shortening

 

2 teasp. salt

 

½ teasp. celery salt and

 

¼ to ½  teasp. poultry seasoning

 

Preheat oven to 425 degrees.  Melt butter and shortening in a large baking pan in oven.  Combine the flour and seasonings.  Roll chicken pieces in the floured seasoned mixture and place in the pan with the fats, turning to coat each piece, and arranging in a single layer.  Bake uncovered for 30 minutes.  Remove from oven turn over each piece and move the middle ones to the outer edges.  Return to oven and cook for another 30 minutes.  Then remove the pan from the oven and pour the whipping cream over the top.  Cover with aluminum foil and return to the oven for another 30 minutes.  Take it out!  It’s done…..you might want to make some mashed or baked potatoes and a salad or veggie to accompany this really rich and wonderful chicken.

Knowing that this recipe came from one of my very favorite restaurants in Uptown, I can attest to the fact that this IS fabulous.  I have made this many times to rave reviews, and when you bring it for a potluck, I guarantee that people will be licking the dish to get the leftovers!
