Have you ever considered having healthier desserts for the holidays? For the second year in a row, I've decided to make healthy Ginger Cookies based on a recipe found online last year. Last year everyone told me they liked them. Fortunately, that recipe still is available online this year. It's found on Dr. Weil's Healthy Kitchen, and considered healthier than some other ginger cookie recipes. Dr. Andrew Weil, MD is well known for his published books and articles on healthy eating and the health of older people.

One great thing about this particular recipe is that it also tastes delicious. Instead of whole eggs, simply two egg whites are indicated in the recipe. Also, the glaze on the cookies is a frozen apple juice (instead of sugar icing) that's been thawed. Those are two likely reasons this recipe is considered to be healthier. However, if interested, please consult a local registered dietitian for further details. Also, there could be a vegan substitution for the eggs whites. Finally, there could be additional aspects of this recipe that I'm unaware of that would be considered healthier than some other ginger cookie recipes available.
