Healthy Homemade Ginger Cookies Made on Christmas Eve in Richmond VA

Have you ever considered having healthier desserts for the holidays?  For the second year in a row, I've decided to make healthy Ginger Cookies based on a recipe found online last year.  Last year everyone told me they liked them.  Fortunately, that recipe still is available online this year.  It's found on Dr. Weil's Healthy Kitchen, and considered healthier than some other ginger cookie recipes.  Dr. Andrew Weil, MD is well known for his published books and articles on healthy eating and the health of older people.

The key and house cookie cutters along with other items.  Cookie dough also is above.

One great thing about this particular recipe is that it also tastes delicious.  Instead of whole eggs, simply two egg whites are indicated in the recipe.  Also, the glaze on the cookies is a frozen apple juice (instead of sugar icing) that's been thawed. Those are two likely reasons this recipe is considered to be healthier.  However, if interested, please consult a local registered dietitian for further details.  Also, there could be a vegan substitution for the eggs whites.  Finally, there could be additional aspects of this recipe that I'm unaware of that would be considered healthier than some other ginger cookie recipes available.

Cookies above are almost ready to be baked.  First, concentrated apple juice glaze will be added.

Friends, family, clients and prospective clients in Richmond Virginia and beyond likely will remember me with these cookies.  By being shaped as houses or keys, these cookies help to remind others that we are a residential real estate agent and perhaps would even appreciate their business or even a referral at some point!  Even if you're not a real estate agent, just find a special cookie cutter that helps remind people of your particular occupation!

Andrew! What a great idea! I am going to do this next year!

I made ginger cookies this year too! I did not glaze mine. Didn't even think about that. I did press on colored sugar but not too much. At first they were soft and I was disappointed then after a day they got crunchy which is what I wanted.

Now I am going into the kitchen and get one for a snack. I really love ginger cookies!

Andrew-If it comes from Dr. Weil it's got to be healthy. As I get older I'm paying closer attention to good quality food, especially deserts.
