Hello everyone-While on my trip in May to Summerland B.C. and Fishhawk Lake Oregon to visit Peg Barcelo, Gayle Rich Boxman and Debb Janes all these ladies eat healthy, so salads was a main staple at both places. I had greek salad for the first time at Peg's and a homemade original salmon salad at Gayle's. I also did a scrumptious salad on a day trip with Gayle. All of them were very tasty.

I like many different kinds of salad including tossed salad and chef salad and a combination of the two and have put a variety of toppings on them. Every since I have been home I have been wanting to make a tossed salad with a few different additions I haven't done before. I had gotten the ingredients but hadn't taken the time to make one.

Today got up to 90* out so I had worked in the garden from about 5:30 a.m. til about 10:30 a.m. before it got to hot to work out there. So I decided that today was the day I would make myself that long anticipated salad.

I will find out shortly how tasty it is because I am having it for dinner. I might have made enough for lunch tomorrow too.  Now I haven't taken a pic of what I am having for dinner or lunch for that matter before but this salad just looked too good not to share. So ANOTHER first for me.

 

Salad

The salad has the following ingredients:

Lettuce

Cherry tomatoes

Cucumber

Carrots

Celery

Ripe olives

Sweet red pepper

Feta Cheese

Cooked salmon

Avocado

 

The following ingredients I have never put in a salad before. Salmon, feta cheese, sweet red pepper and avocado. I had feta cheese for the first time at Peg's and Salmon and Avocado for the first time at Gayle's. The red pepper just because I have tasted red peppers before and like them better than the green ones.

The other night I added leftovers to lettuce for our dinner.  Thin sliced cooked pork chops and grilled corn on the cob that I shaved off the cob into our salad bowls.  It was yummo.

Sharon, isn't it fun experimenting?? When you try it on yourself it doesn't harm anyone, you are your own test subject. These ingredients constitute all that I've used in a single salad. As a matter-of-fact, I must have been channeling you, because I had a hot salmon salad tonite, much like the one I made for you and Debb. I didn't have feta or black kalamata olives, but they would have been a perfect addition. I DID have red peppers, tho!

Alexandra-I love avocados but don't often eat them but plan on changing that. Salad is always a good thing to crave even at 11 am

That looks and sounds like a really delicious salad. 

I need to find a recipe for spicy beef salad. Yes it has beef. It's a Thai dish and the dressing really draws all the flavors together.
