I have never shared a recipe that I am aware of at least here on the Rain….
But, when my wife made these for Father’s Day, I wanted to let other women know that the way to a man’s hear for any day is through chocolate…
Here is the easy (and very rich!) recipe. Enjoy!
Chocolate Rum Truffles - Makes 24 truffles
1/2 cup whipping cream
8 oz. chopped bittersweet chocolate (about 1 2/3/ cups)
1 1/2 T dark rum
1/2 c cocoa
Bring the cream to a boil in a medium saucepan. Remove from heat and add chocolate.
Whisk chocolate and cream untill chocolate is melted. Whisk in rum. Pour into a bowl and refrigerate until firm. Remove bowl from the refrigerator. With a 1 inch ice cream scoop or teaspoon, scoop the balls of truffle mix onto a piece of parchment paper, occasionally dipping the utensil in a glass of hot water.
Put cocoa in a bowl. Pick up each truffle and roll between your palms to round it and smooth the surface. As you work, drop the truffles into the bowl of cocoa.
When 6 are in the bowl, swirl bowl to cover truffles with cocoa. Transfer to a plate and continue until all are finished. Refrigerate until serving.
