Cooking in the Nude.  It’s Great!

 

I have a cookbook by this name, so relax already.

This is a recipe that I have adapted from one in the cookbook, and it might get you to that state by the end of the night!

 

2 Tablespoons of butter, melted

1 tsp dried basil1 tsp dried basil

1 tsp dried paprika

1 tsp black pepper

1 tsp ground red pepper

½ tsp salt  (I use more)

¼ tsp garlic powder

 

4 ( 4oz.) farm-raised catfish fillets

Vegetable cooking spray

 

 

Put the first eight ingredients into a small bowl.

 

Place the fillets on a rack of a broiler pan sprayed with the cooking spray and brus fish with the butter mixture. 

 

Broil 5 and a half inches from the heat with the oven door partially open for 7 minutes or until fish flakes easily with a fork.

 

 

This can serve up to four people.  But, because it is so good, likely two!

Nice recipe, Suzanne. It's very similar to a recipe I use for a lot of different fish filets, except I put mine in a pan with about 1/2 inch dry vermouth and then broil.
