Roasted Pumpkin Seeds

Last night was the big night at our house for carving Jack-o-lanterns out of our pumpkins. This year I decided to save the seeds to try roasting them.
I looked up a recipe this morning and gave it a whirl. In as little as 5 steps, the recipe by ohsheglows.com, was fun, easy and the end result was fabulous! 
As you carve your pumpkins, save the seeds. Not only are they super yummy, they are good for you as well. Pumpkin seeds are packed with iron, magnesium, fiber, zinc, potassium, healthy fats, protein, and tryptophan. Luckily we still have one more pumpkin! Seconds please :)
