What to Do With Leftovers ... Soup!!!

Today was the perfect day to make homemade beef vegetable soup.

 

Yesterday our Christmas dinner included a beautiful beef roast, mashed potatoes and gravy, lima beans, deviled eggs, and hot rolls.  Of course the dessert was a homemade pumpkin pie.

 

This morning I decided that with the leftover roast and gravy that I would make soup.  It was fun for I added lots of goodies into the soup pot and allowed it to boil  and simmer for several hours.  I didn't even follow a recipe ... I just used what I had on hand.

 

It was delicious and everyone had several bowls.  They preferred another bowl of soup and passed on the dessert.  Shocking.

 

Get creative with those leftovers and enjoy the results.

Hi Judith, I would bet it was fabulous. It is sort of cold here, it was in the high 60's, burr, and you soup sounds like the perfect food to share that just makes you feel good allover. My best soup is my Gazspacho. A famous chef from Newport RI shared a secret that makes all the difference. Use white Balsalmic vinegar in the preparation. It tastes remarkable.

Sounds like a scrumptious belly warming soup Judith.  Soup has always been a staple in our home, with there usually being at least three to four quarters in the freezer at all times.

I love soup; but I had NO LEFT OVERS! I made cream beef with a pound of hamburger meat and today I will make chili with the other pound.
