Today was the perfect day to make homemade beef vegetable soup.
Yesterday our Christmas dinner included a beautiful beef roast, mashed potatoes and gravy, lima beans, deviled eggs, and hot rolls. Of course the dessert was a homemade pumpkin pie.
This morning I decided that with the leftover roast and gravy that I would make soup. It was fun for I added lots of goodies into the soup pot and allowed it to boil and simmer for several hours. I didn't even follow a recipe ... I just used what I had on hand.
It was delicious and everyone had several bowls. They preferred another bowl of soup and passed on the dessert. Shocking.
Get creative with those leftovers and enjoy the results.
