The mint in the photo is just garnish. Bruise the leaves for perfect flavor blending in your cocktail!
I always like to offer some special non alcoholic drinks at our parties here on Kauai. Mai Tais are so popular that my guests would sometimes settle for a little Mai Tai mix sans alcohol which really falls short in my opinion.
Here's a modification of the Perfect Mai Tai recipe I posted today that works for those that want one without any alcohol. If you prefer more sour simply adjust the amount of the different fruit juices (more lime, less orange or pineapple), and if you want less sweet leave out the simple syrup.
Non Alcoholic Mai Tai
You’ll need a cocktail shaker with a strainer or the equivalent, plus high ball glasses and straws. The following makes 2 Mai Tais so multiply for whatever number you need.
Prepare Ahead: Shave or finely crush enough ice to fill the high ball glasses. Put the ice back in the freezer until you are ready to pour your drinks. That way the ice won’t melt and it will properly chill your Mai Tai.
Ingredients:
1 oz. orange syrup
2 oz. orange juice (fresh is best)
3 oz. pineapple juice (fresh is best)
3 oz. guava juice
3 oz. fresh squeezed lime juice
1 oz. orgeat syrup (this is an almond syrup with orange or rose)
1 oz. simple syrup
crushed mint leaves to garnish (very important)
pineapple wedges for garnish
lime wedge to garnish
Instructions:
- Put all liquid ingredients in your cocktail shaker.
- Fill two high ball glasses with shaved ice.
- Shake cocktail shaker thoroughly, about ten to twelve times.
- Strain into two glasses.
- Crush the mint leaves between your fingers until they are well-bruised and float on the top of the drink.
- Garnish with pineapple and lime wedges.
- Drink through a straw.
If you are having a party, these can be made ahead of time and stored in a pitcher, but make sure you stir well before serving.
