Sacramento is home to several delightful Paragary Restaurants, which come together under the banner of the Paragary Group. I was able to share a relaxed early afternoon dinner with my son, and daughter-in-law, at Paragary’s Centro Cocina Mexicana, located at 2830 J Street, Sacramento.
Kurt Spataro is the Executive Chef at Centro Cocina Mexicana. Kurt has garnered considerable experience from his time in the kitchens of Mexico. He gives credits to Diane Kennedy, a regional guru, with inspirational dishes on the menu.
I opted for Mancamanteles - Slow-cooked pork shoulder in a sauce of ancho chiles, spices, pineapple, plantains; with Butternut squash tamales.
Among other dishes at our table, was Asada de Puerco - Wood-grilled pork carnitas with cascabel salsa, Kabocha squash, grilled onions, black beans.
I couldn’t help but believe that some of the very best Mexican food in the Greater Sacramento region, is served on the tables of Centro Cocina Mexicana.
I can’t wait to go back!
