Pasta Fagioli Soup

 Last year my friend and I found this wonderful recipe on http://www.crockpot.com/ and thought I would share it!  I am also going to include my variations.  This is a wonderuly hearty soup, perfect for a cold day, or any day!  We made it for our camping trip that way there was always warm food and we didn't have to worry about cooking.  And the kids loved it!

 Pasta Fagioli Soup

Instead of 1lb. of ground beef, I do a half pound of ground beef and a half pound of sausage all fried together.

Instead of 2 cans of stewed tomatoes (Love the taste of tomatoes, can't stand the texture) I opt for 1 can of tomato sauce. (Flavor without the texture!)

I also add a carrot or two, depending on how much I am trying to make. Slices or chunks work, whichever you prefer!

I hope you enjoy it as much as we do.  We rarely ever have left-overs when we make it, and on the rare occasion that we have them, it's really good the next day too!

***Make sure to wait on adding the macaroni.  It'll get too tender if you add it too soon!

Ummmm, This sounds great! It is a twist on the pasta fagioli my grandmother made with just a light marinara, beans and pasta. This sounds heartier- I am going to try it. My grandmother's was a Friday night favorite. Thanks for bringing back some great aromatic memories.

Patrice, interesting you should mention it being low-cal.  When we found this recipe, my friend was actually doing Weight Watchers, and she felt that this fit into her diet and I think it gained her little or no points.  It seems to be a fairly flexible fix that you could add or take away whatever ingredients you prefer!
