Kevin,

Love your creative analogy to housing with Champagne bubbles.  The French have now decreed (and I have it on the highest authority from Frances two most revered Champagne producers, Krug and Dom Perignon, from the lips of their top execs) that flute glasses are so five minutes ago.  Champagne should be enjoyed from Chardonnay or Riesling glasses, so that the bubbles have room to breathe...and then it is easier to count them.  LOL A

Alexandra, I'd be much happier using a Riesling glass for Champagne with a contemporary design and delicately long stem. Those 5 minute or older fluted ones could convert into parfait glasses easily enough. One, two, three, four, five, six,...... darn, one, two, three, four............
