Couscous Mango Mousse (Low fat/calorie version)

                                                                                                    

This is one of my all time favorite summer desserts to make.  You can use any type of fresh fruit you have to garnish.  The original recipe call for heavy whipping cream which I don't use.  It also wants you to chop up the mango and add it to the mousse.  I don't do that either but you can.  I like to just use the fruits to garnish.

 

1 cup water 

3/4 cup couscous 

2 tablespoons sugar 

One ripe mango

One small container light cool whip

One 8 ounce container of vanilla yogurt

Raspberry or apricot flavored syrup

 

In a medium saucepan over medium high heat bring the water to a boil. Add couscous in a stream. Stir once. Remove from heat. Cover and let stand until the couscous is tender, 12 to 15 minutes. Mix in the sugar.  Cover tightly and set aside. 

 

In a medium bowl combine Cool Whip with yogurt.  Fold in the couscous.  Put in parfait cups and garnish with fresh mango slices and mint. Drizzle flavored syrup on top.

Wow - I never would have thought to use couscous in a dessert. I'm guessing it's almost like  a rice pudding?
