Pineapple Stuffed with Pork and Wrapped in Bacon....Also Called Heaven

I've been on a roll with one very business oriented blog post after  another since monday morning.  I thought I'd post something that was not as serious. Oh wait, what could be more serious than a cored pineapple, stuffed with lean pork and wrapped in bacon???? That's serious eating!!

 

My entire house has the aroma of Easter dinner with a baked ham covered with slices of pineapple.  The pineapple has 83 calories in a cup...the pork will cook with the pineapple juice and the bacon will crisp with all of the fat dripping off.  Pineapple is very high in vitamin C and Magnesium. The latter is very good for skin and bone health.  Pork is high in protein.  

Good food to eat.... and no grain!!!

Oh Barbara - this is soooo unfair! I am trying so hard to stick to my Isagenix diet and then I see this absolutely luscious post! I am totally going to make this - my daughter's boyfriend is a bacon freak so he'll be over the moon with this one! I guess I could just eat the pineapple part......

I cooked it at 350 until it was done....I judged by the bacon....when it's very, very crispy, it's done!!!

I have mine tested every year.... I'm good!!! the bacon is cooked to a crispy state, but there's still some fat.... not for folks with heart issues, for sure....

YUMMY!!! What kind of pork is in the stuffing - is it ground pork?  I would love to make this because pork is so lean and delicious and I am definitely not kosher!!!

I just bought boneless, thinly cut pork.... my daughter did, too, and she rolled it and filled the area where the core was.... she's smarter than I am!! I cut mine into small pieces.... and stuffed it....

Oh man that looks good!!  I remember when I was a young girl I made SPAM with sliced pineapple . . . very Hawaiian!    This looks delicious.  I'd put some mustard on the top before I baked it.
