Starting at 4am I put a 10lb pork butt (or shoulder) depending on how your butcher labels it onto my Traeger Pellet Smoker. My bride and pup Dixie got me the smoker for Father's day. I prepped the big butt with Kosher Salt and lots of my favorite Pork Rub the day before (called dry brining) so it could soak up the salt. So up at 4am I put this bad boy on for a 13.5 hr smoke.
We managed a few chores, listed a nice piece of land, attended Church and then settled in for some college football. My bride loves the Alabama boys who kicked off at 5pm and by 5:30 the big butt was ready to pull of the grill and 30 minutes later start to shred this pork into some fabulous pulled pork sandwiches. Life just don't get much better than Saturday Smoking, Eating and Football.
