 Here are two of my favorite fall recipes.

 The apple crisp is vegan and gluten free, but you would never know that it's healthy....it's really very good! 

 The squash tart is not vegan or gluten free but easily adjusted to be either.

 

Skillet Apple Crisp

This apple crisp recipe is the perfect dessert for two.

It's quick to throw together, and really delicious with your favorite vanilla ice cream. 

The only problem is you may find yourself wanting more! You may want to use a larger skillet and double or triple the recipe!

 

The only adjustment I make to this recipe is to cut the amount of brown sugar in half.

Butternut Squash and Caramelized Onion Galette

This is a great side dish or serve with a salad to make it a meal!

I have never made the pastry from this recipe. Instead I use a ready made pie crust from Trader Joe's. You can use whatever pie crust you want to use.

To make this vegan, simply leave out the cheese and use vegan butter or olive oil.

Sharon-Both of these sound delicious. I like the idea of the apple crisp for two and I do like butternut squash so I have bookmarked to keep for when I take the time to make them.

Tempted to try this one, apple crisp.  What really caught my eye was your choice of ice cream.  Does the coconut derived ice cream remove cholestrol from the equation?  I have not had ice cream for ages and wondering if this might be a new found treasure.  Mark

Mark Don McInnes, Sandpoint   You can try the apple crisp without any ice cream at all to be safe....it's really delicious all by itself!  As for the coconut milk and cholesterol...I did a quick internet search and came up with conflicting info. It's definitely better than regular whole milk, and some sources say it actually helps raise the good cholesterol, but you will have to do some research on your own to get the answer you need.

I most definitely will.  I have always looked at 'fat free' etc and that does not change where it starts.  Have never seen coconut based so anxious to check it out.  Of course maybe I need expand my shopping habits beyond convenience stores...  Thanks Mark

Sharon- ok, I can do apples and nuts!  Rarely do ice cream because I have to chew about 3 or 4 of those LactAid things.  (like eating chalk)

It's a wonderful dessert that really is fairly healthy....not much sugar and no flour!  The ice cream is the killer, and you won't be eating that part!

The typical crisp is covered with some form of flour and/or oatmeal and lots of sugar and butter. Not so with this recipe. This crisp is a very healthy version, and yet still really delicious!  Try it, you'll like it!  LOL

Sharon, I'll have to try the coconut milk ice cream.  I use a lot of coconut milk and cook with coconut oil.

I try to limit my intake of dairy and this makes it much easier. It's not as "vanilla" as I would like. You do notice the coconut flavor, but it's really a very good alternative.
