Friends for dinner tonight, Maybe Pumpkin Cheesecake Pie

With friends company for dinner I think a pasta dinner but thinking for dessert maybe this one:

Fluffy Pumpkin Cheesecake Pie

2 (8oz.) pkgs cream cheese softened

2/3 cup sugar

2 tsp. pumpkin pie spice

2 eggs

1 (15 oz) can pumpkin

1 ready made extra serving pie crust

In large mixing bowl, beat cream cheese on medium speed of electric mixer until fluffy.  Add sugar and spice.  Beat until combines.  Add eggs, one at a time, mixing until just combined after each addition.  Stir in pumpkin.  Pour into crust.  Bake at 350 degrees for 35 to 40 minutes or until center is almost set.  Cool for 1 hour on wire rack.  Refrigerate at least 3 hours.

I love pumpkin cheesecake but not in traditional pie crust - I like to make the graham cracker crust with pumpkin pie spice added to that too.   Like Eggnog Cheesecake with loads of nutmeg in the crust!

What kind of pasta are you serving Will Hamm ?

I don't particularly care for pumpkin pie, but pumpkin cheesecake--that's a whole 'nother story. Your recipe is similar to mine, but I substitute stevia for the sugar, Will. Enjoy your dinner and your dessert!
