Eek!  We are down to single digits now!  Christmas is in 8 DAYS!  Will you be home for the holidays?  Do you travel?  What are you cooking?  

Most of us have a handful of recipes that are synonymous with certain holidays.  For me, fudge is one that just goes with Christmas. It's one of those decadent desserts that are irresistible.  I simply cannot have just ONE piece.  I try very hard not keep any at home for that very reason.  I typically make this recipe when headed to a party or potluck, or give it away as a gift.  It can't be left sitting around my house or I can (and will) eat my weight's worth before New Year's rolls around.

Easy Fudge

4.5 c. sugar

1 12oz can evaporated milk

1 lb butter

1 1/2 pack chocolate chips

1 package mini marshmallows

1 tsp. vanilla

chopped nuts to your liking (optional)

Mix sugar and evaporated milk in a heavy pan.  Bring to rapid boil on low heat.  Boil 8 minutes.  Turn off heat.  Add butter and allow to melt.  Add chocolate chips.  Stir in package of mini marshmallows.  Add vanilla and nuts.  Place in cool, dry place and allow to set up prior to cutting into cubes. (This recipe makes a LOT of fudge.)
