Debra Leisek  you are on fire, you nailed most of the ingredients yellow and red beets too. Instead of a balsamic sauce first I marinated the root vegetables for about a week... then I baked them in the marinade for about 35 minutes to soften them and continued marinating them in the fridge for a few more days.... so today was easy just throw them together:))Endre

Beautiful Salad! Makes me hungry! I like to roast beets with acorn squash and then put over greens with feta or goat cheese and nice dressing... maybe a little quinoa for extra protein!

I found a trainer that will come to my house and when he comes he brings me food!  A beet salad is often in the mix.  I love them!!

I need the recipe for this. I froze a case of beets this year. I've been steaming them and eating them. But your dish looks wonderful. Is that gorganzola cheese?

Dick Greenberg  Diane loves beets so I keep coming up with different strategies to make it.... this one is quite a bit challenging to do the marinade and before and after do a quick bake to get the root flavors to be dominant....Endre

Debbie Laity  I am a firm believer of baking them to get the full flavors to dominate... In this instance I tried a different approach to first marinate and did not like the results then I went to baking and back to marinate and finally one more baking before I served it cold:)))send me a private email and will give the detailed step by step...by the time Diane had it she loved it:)),Endre
