One thing that I've discovered that is as true in the real estate team as it is in life is that having a good team of people around you makes all the difference in the ease of the transaction. I've been blessed to find and excellent Title Officer/Closer, some great lenders, an amazing inspector, pest control person and an appraiser. If you couple that with the fact that I own my construction company there is absolutely nothing we can't do to make your real estate transactions proceed smoothly. I also managed to win the family lottery, I've got a great support team in my siblings and my parents, but I really got lucky in the husand department he does his own laundry and helps with dinner by either doing the dishes or cooking.
Lately he's been experimenting with Fried Chicken, which is good for the lips but not great for the hips so I've had some pieces left over. As good as cold fried chicken is, I always like to make a second meal out of leftovers, preferably one that is different from the original meal. Going through one of the books of recipes I've collected over the years I found a recipe for Fried Chicken Salad and it was amazing.
Here is the recipe:
For the Dressing:
Whisk together 1/2 cup buttermilk, 1/2 cup mayonnaise, 1 TBSP Dijon mustard and 1 tsp salt, or shake it up in a jar - which I personally find easier, refrigerate until ready to use.
For the Salad:
Toss 1 bag mixed greens with 2 pieces of left over shredded fried chicken (I've used oven fried as well as pan fried chicken and while both are good, the pan fried chicken is better) and 1/4 cup of parmesan cheese and 1/2 cup croutons (optional). You can either dress the salad in the bowl or pass the dressing whichever you prefer. This makes 2 overly generous entree sized salads, so double or triple the recipe if you need to.
Enjoy this easy meal and spend some time thinking about how great the team of people that surround you are and be grateful you got so lucky. I know that I am.
