Pasta Time ! Making Macaroni!

This fall while I was in Italy, I learned to make pasta from scratch. It takes time, patience and skill. Here are some photos. Many of you have seen my blog about jarring sauce, if not here's the link...

Making MacaroniThese photos show us making fresh pasta, in this case called Macaroni, a thick spaghetti-like pasta with a hole in it. First the dough is made with a combination of eggs, flour, and salt. With continuous folding, and muscle power, the dough it kneaded into a large ball. Then small pieces are broken off and a similar size is maintained. The 2 women here are my teachers, and I refer to them as my sisters in Italy!

 

 

rolling pastaEach small piece is taken and with gentle smooth and even pressure, you roll it around a stick (a dried weed that grows near the water).

When its complete, you pull it off the stick, being careful not to squeeze it.

Then all the pasta is laid out on clean dry cloths, and left to dry. This takes about 8 hours.

When ready, it gets boiled in salted water, but only takes a few minutes, because its fresh pasta.

 

Strain the water, put pasta back in the pot, and add sauce.

 

 

 

Macaroni, is better than spaghetti!Its denser and with the hole that catches the sauce inside its so delicious!

 

Then serve, you could add some fresh sauce and cheese on top.

I would like to give that a try. I used to cook so many new things and enjoyed the experiences. Now it seems work gets in the way. I need to do something about that. I'll let you know when I give it a shot.

Debbie, I try to at least once a week do something big! Have you ever made riceballs? I make them and when I do it's 6 dozen cause everyone loves them!

The trick is in the stick! But so worth it! I think it's a reed, a little waxy so it slides off. I love macaroni over fettuccini, hope he tries to make it!

Omg so true, warm fresh Italian bread doesn't last a minute I'm my house! Especially if there's authentic olive oil or fresh sauce to dip it in!

Yum! My little Italian nonna taught me how to make fresh pasta when I was a kid. I remember her telling me that "all GOOD Italian men know how to cook!"

We used to make it from scratch together, cut it by hand and hang it to dry on a clothesline in her kitchen! Loved doing that. She taught me how to make my sauce too!

Marco, that's a great memory with your nonna. I love traditions. We jar sauce every summer and it gets the whole family involved from the young kids to the old and it's beautiful thing that all year we make sauce and think of eachother.

This is a great post! What a fantastic photo journal of the art and pleasure of making pasta! I've always loved Italian food and seeing the process of how noodles are made is a real eye-opener for me. Thanks to you, I've learned a lot! 

You're photos illustrate the passion it takes to make a home-made meal made with love. Meals like this today are so rare. You truly are wonderful!!!

Patricia, I'm so fortunate my teachers are like sisters to me. Because of them I triuely live like an Italian when I'm there, not a tourist. And I bring it back to NY and share with family and friends. There are a few agents in my office that have received trays of what I cook and when I make riceballs everyone gets some. They all say they are better than any pizzeria.

Ellen,

cooking any food from scratch is very rewarding, but it does require a lot of time. When I did not work, I cooked everything from scratch, but now, it is very difficult. You might feel the same.

Debbie, my husband was born there, and we have a house in the mountains there, so since my kids were little we went 4-8 weeks every summer. Now we sometimes go without the kids, at different times of the year. It's wonderful getting a mix of both cultures!
