This fall while I was in Italy, I learned to make pasta from scratch. It takes time, patience and skill. Here are some photos. Many of you have seen my blog about jarring sauce, if not here's the link...

These photos show us making fresh pasta, in this case called Macaroni, a thick spaghetti-like pasta with a hole in it. First the dough is made with a combination of eggs, flour, and salt. With continuous folding, and muscle power, the dough it kneaded into a large ball. Then small pieces are broken off and a similar size is maintained. The 2 women here are my teachers, and I refer to them as my sisters in Italy!
Each small piece is taken and with gentle smooth and even pressure, you roll it around a stick (a dried weed that grows near the water).
When its complete, you pull it off the stick, being careful not to squeeze it.
Then all the pasta is laid out on clean dry cloths, and left to dry. This takes about 8 hours.
When ready, it gets boiled in salted water, but only takes a few minutes, because its fresh pasta.
Strain the water, put pasta back in the pot, and add sauce.
Macaroni, is better than spaghetti!Its denser and with the hole that catches the sauce inside its so delicious!
Then serve, you could add some fresh sauce and cheese on top.
