Shannon’s Tortilla Soup

1-quart chicken broth

¼ cup butter

¾ cups of flour

¼ teaspoon white pepper

½ cup shredded Jack and cheddar cheese

1 cup fat-free half and half

1 teaspoon diced jalapenos

1 can Rotel tomatoes with chilies

1 cup frozen diced fajita chicken

Garnish: Crisp tortilla strips, sliced avocado and shredded cheese

Heat broth in stock pot. Melt butter in microwave safe dish (20 seconds), stir in flour, microwave additional 30 seconds, stir until smooth. Stir mixture into chicken broth. Add pepper, cheese, half and half, diced jalapenos, Rotel and frozen diced fajita chicken. Bring to slow boil. Good evening Shannon.  I take it your new to the Rain...  Anyway my wife is making lasagna soup tomorrow for supper..... It will be a first for me, I bet it's tasty....  I'll print this one out for us to make another day...
