It is a gourmet culinary technique long used by chefs worldwide, but now accessible to home cooks. The sous vide cooking technique involves cooking food in pouches, submerged in a water bath held at a precisely controlled temperature. Learn how you can cook almost anything sous vide, from meat, seafood, poultry and eggs , to vegetables, desserts, yogurt, and even infused syrups and liquors. This class taught by chef Matt Henry of 128 Pecan will cover the basic science behind culinary arts. A simple introduction to pairing foods, spice/herb uses, and guidance on the essentials of knife skills, food handling, and safety. Most importantly, participants will learn the art of saute which allows for making thousands of simple, delicious meals in only a few minutes. Matt is a licensed culinary instructor who holds a structured, but fun and creative classroom!

Susan Lachmann, Women on Air
Susan Lachmann of WETS Women on Air will be in the teaching kitchen to share flavorful specialties learned from her first generation Sicilian ancestors. The ingredients are simple and the cooking style is basic, with ingredients chosen from seasonal gardens and local producers. With a firm belief that cooking is art making, the class will prepare and taste from a menu of pollo limone, funghi polenta, savory greens, plus a surprise or two! Susan promises family stories and musical sound tracks during this lively session in the kitchen. You can expect to gain some essential techniques as well as personal recipes. Susan has taught Italian cooking in Pennsylvania, Children’s programs, as well as appeared on Daytime Tri Cities and other cooking shows. She is known as “the chef with an easy style and high flavor”.

Summer Sizzlin’ in the Kitchen: A Four Day Teen Cooking Camp

Enjoy four days of sizzlin’ in the teaching kitchen with four culinary experts. Students, ages 12-17, will learn the basics, getting creative and enjoy collecting recipes. On the final day students will prepare a graduation lunch for parents.
