Maryland Crab Soup: a recipe inspired by Margaret Rome, Baltimore Maryland some of you might have noticed we were bantering back and forth about an Anniversary function she attended. Hence I asked what the recipe of the meals were. Well the long and short of it. Here is my version of the Crab Soup:)
water chicken bouillon cubes, chicken with tomato flavored bouillon cubes, fish stock bouillon cubes
two bay leaves
one lbs crab meat preferably live crabs (in my case I took a short cut Trader Joe's one lbs canned crabs had to do since I did not feel like driving to Santa Monica Seafood for fresh crabs)
Two diced tomatoes and a hand full of Trader Joe's sun dried tomatoes
two cups of celery
two fresh corn on the cob (slice kernels off the cob)
two carrots diced
red & yellow bell peppers chopped
two cups of green beans (frozen in my case did not have time to go to the farmer's market for fresh)
two cups of frozen Lima beans from Trader Joe's ( same reason as above)
two cups of fresh shredded Kale ( can also use cabbage )
one medium sweet onion (my choice is always Vidalia)
couple cloves of garlic
three medium Yukon Gold potatoes cubed
and of course olive oil
since Diane can not have any hot stuff you might want to add black pepper and hot sauce of your favorite brand to taste.
The process is easy once all the work is done... saute the garlic, onions and the vegetables first then add the water with the bouillon cubes and boiled and reduce to simmer and the potatoes and you are almost done... lastly add the crab meat once you are satisfied with the stock and the flavors as well as the texture of the rest of the soup...
Once you added the crab meat give it about 10 minutes for the flavors to blend... Chop the parsley and serve with your favorite bread.
Needless to say if you have chicken, fish or vegetable stock then use that for a more intense flavor!
