Stuffed French Toast and a Beach Walk in Carlsbad

It was a gorgeous fall morning, and Cafe Elysa's coconut custard stuffed French Toast was calling my name.  There was nothing at home that appealed to me, and while I was originally going to the French Bakery Cafe for a croissant, my stomach and taste buds won out. Plus I needed that extra energy for the 2 1/2 mile beach walk I planned to take afterwards from the Village almost to the power plant and back.

I could have opted for yoga on the beach (they were perilously close to the incoming tide, I thought) or beach volleyball, but the walk was just right. The weather was beautiful and the beaches had more seagulls on them in some areas than people.

Coconut custard stuffed French toast? O M G - I could totally dig some of that, Jeff but, like you, would have taken a long walk to work off those delicious calories! The beach volleyball may not have gone too well right after that French toast! LOL

Jeff- coconut custard stuffed toast sounds almost like it could be a cousin to a creme puff! YUM!!! Yes, I'd opt for the French Toast and then head for a long walk! Not bad!

I don't think I've tried a coconut custard before! Sounds like it could work great with some french toast though, so no wonder it was calling your name

Ha, ha, ha, you're right, Jeff. Those yoga guys do seem really close to the tide. Hope they don't all lean down into the prayer position and get salt water up their noses.
