Cafe Ameraucana has opened a restaurant located at 2410 NW 43rd street. Originally a very popular pizza truck, they now have a cozy fixed location. The dough is a wild fermented sourdough that is the best texture of dough I've experienced. It is extremely soft with a light chew and char marks from the wood fired process in their imported oven. The Fontina Fungo is the only pizza I've tried (twice) via carry out but it is so exceptional I'm not sure I'll make it to the others! There's loads of umami and bombastic flavor.

Check them out. This is some of the best pizza I've had in Gainesville.
