Let The Holiday Baking Begin!
Everyone has a favorite recipe they like for the Christmas Holidays, in our family, it is the Soft Molasses Cookie. They are big,soft, molasses cookies topped with butter cream frosting and half a walnut. This is a recipe that has been passed down in our family since the 1950's. This recipe has stood the test of time! They pack and ship well and in a closed container will last through the holidays. Well, not in our family they hardly last a week.
You will need a large mixing bowl, a large saucepan, cookies sheets, parchment paper ( or greased cookie sheets with flour works)
Grocery List: Molasses, Butter, Brown Sugar, White Sugar, Eggs, Flour, Cinnamon, and milk, frosting, nuts and raisins. A tuperware container or tin to keep them fresh.
Soft Old Fashion Molasses Cookies: Set oven to 375*
Cream together in a saucepan
1/2 cup butter
1 cup sugar
2 large eggs
1/3 cup brown sugar
1 cup light brown molasses
Melt over low heat until thoroughly mixed.
While that is melting, in a separate bowl mix dry ingredients:
4 cups flour
2 1/2 teaspoons cinnamon
1 teaspoon sale
1 teaspoon baking soda
After the two mixes are stirred cream them together with 3/4 cup of milk. Mix thoroughly. I use a hand mixer however my sister uses a big stand mixer either works fine. Note: they are delicious when you add raisins and chopped walnuts into the batter.
Next let batter stand for 5-10 minutes until it thickens. Grease and flour the cookie sheets( or use parchment paper) Use a tablespoon to drop spoonfuls on the cookie sheet. Bake for 12 minutes at 375*.
Remove from oven and let them cool. Once cool to the touch top with butter cream frosting and half a walnut.
